CRAB CAKES

I Can’t Believe It’s Not Crab Cakes

Today in our cooking class we made I Can’t Believe It’s Not Crab Cakes.  Peers could smell the crab cakes and came to the kitchen to see what we were cooking.  I thought it was very creative and it was yummy.  I was so excited about this recipe I was inclined to make it at home. I made a list with my sister and I took it to Target to buy the groceries.  Then I went home to meet my sister and made the appetizer. It made me feel really good to work with my sister on this.

Here is the recipe

Ingredients
2 cups coarsely grated zucchini
Salt
1 egg beaten
1 and ½ teaspoons Old Bay seasoning
1 teaspoon Dijon mustard
1 Tablespoon mayonnaise
Juice of 1/2 a lemon
¼ cup chopped fresh parsley
Vegetable oil for frying pan

Method: Place grated zucchini in a colander. Sprinkle lightly with salt. Let zucchini sit for about 30 minutes allowing it to drain. Squeeze to remove additional liquid. It should be fairly dry. Place zucchini and bread crumbs in a large bowl and mix together. Add the Old Bay, lemon juice and egg. Mix. Roll into balls. Put into a frying pan with vegetable oil. Let brown on one side; turn them over and brown on the other side. Put them on a bun and enjoy.

  1. When I read this article I felt hungry.I wuold like to ask beth if she can help me make this recipe. It looks that is delicius and healthly and easy to make, but I am not good coooking so I will need some help. MARCOS PEREZ
